Happy Friday all! Mine was really fantastic! Running, cooking, pretty nails and running club!
As you know, every week I make a treat for my running club. This week, I volunteered to make guacamole for my dance class Thursday, but then wasn’t able to go. What to do with 6 avocados?!
In lieu of baking this week, I made guacamole, or as I call it, guacAMAZING. This is a recipe I adapted from a friend, and I always get a lot of compliments on it!
4-5 ripe avocados (I used 6 little ones)
1/4 of an onion, minced (I used half and diced for bigger chunks)
1 tomato
1-2 handfuls of cilantro
1 lime
your favorite salsa
salt and pepper to taste
Dice avocados and place in a mixing bowl. Throw out all but one pit/ stone (keeps guac from browning prematurely)
For smoother guacamole, give it a firm stir. I skip this step usually because I like chunks of avocado. There will also be plenty of stirring later on.
Chop onion and add
Dice cheeks of tomato and add
Chop cilantro and add (I do this haphazardly, I like chunks of cilantro)
Then add salt, pepper, and 3-4 heaping spoonfuls of salsa
Squeeze in juice from half a lime. This is most important! It gives it a zing people love and also prevents early browning.
At this point it’s ready! Give it a taste and determine if it needs more salsa, pepper, salt etc. I normally go light on the salt, heavy on the pepper and use medium salsa. It’s really the most delicious guacamole I’ve ever had! For variations, you can add chopped jalapeños or garlic.
Anyways, on to my Friday!
I got up and after some mild dilly-dallying went out to get my run done. Slow but pleased!
5 miles! I’m finally starting to feel back in the groove of running. I took it easy, but put some effort in, so I was a little disappointed in my times. But coming back from a torn achilles, plus a few vacation lbs, would most likely be the culprit of that.
I came home and was excited to find these in the mail! Bibs for a virtual race we’re doing!
I have to say, I love seeing these virtual races popping up everywhere. It’s a great way for Dan and I to feel like part of the running community back home.
Post run, I showered, had some lunch, made the above batch of guacamole and did my nails. I decided I wanted to put a sparkle in my step and went for a glittery spring color:
Around 5pm I got on a train with my guacAMAZING and met Dan at the international market at 6pm. Here we can find American foods in bigger quantities (and with bigger price tags!). I picked up a giant bag of tortilla chips for my guacAMAZING and he headed to running club.
I’m really hoping this Friday was my last running club where I sit out and take care of member dues and refreshments! I’m always happy to help but I wanna be running with the pack! The trail was only 5 miles today, which is what I did this morning, but something about running with everyone, I push myself more and I know I still need to take it easy.
But we had a great time and even got everyone together for a fast photo! I’m in the purple hoodie, my coworker Jenna is to the left of me, and just barely in the photo next to her is Dan!
Behind us is the Tokyo Sky Tree, currently the second largest structure in the world! So pretty at night!
