Here I am, maintaining my usual excuse of being too busy to update my poor blog. So this entry will be a mishmash of the past couple weeks leading up to where Dan and I are now- Kona, Hawaii!
To begin, a few people asked what kinds of dinners Dan and I have been cooking. Honestly, nothing super impressive! We usually cook up chicken, fancy it up with veggies or a sauce, and have a side of vegetables.
I made a good garlic sauce with soy sauce, ketchup and garlic
I poured the sauce over the chicken and threw it in the oven for 45 min. It was delicious!
Another one Dan and I like is a spicy honey chicken with a veggie crust. I mixed honey with Cholula, and added in onion and garlic. Again, pour over chicken and put in the oven. It was hot and sweet!
Sometimes if I don’t want to wait for chicken to bake, I’ll throw it in a skillet with veggies. To avoid cooking with oil or butter I boil the chicken, then throw in tomato, onion, garlic, bell peppers, olives, jalapenos, etc. Sometimes a spoonful of pasta sauce.
Hopefully that gives people a better idea of our boring dinners!
When we buy things like Nature Valley granola bars or Cholula hot sauce, we have to find an international market since most Japanese grocery stores don’t carry them. While leaving one intl grocery the other day, we found Whole Foods reusabags!
I’ve been spending time with coworkers too! Even though we work at different schools throughout Tokyo, it’s nice to get together and talk about work and how it’s going.

Dan has been busy working working working. Putting in long hours at his office then working at home til the wee hours of the morning. Last week we were surprised with a dumping of snow and he decided to work from home so we’d have a chance to walk around and see everything buried in whiteness!
We decided to walk 2 towns over to Sengawa and warm up with some Starbucks
Of course, I wanted to make a snow angel before we went in for the night!
This past weekend was just a blur of getting things together for our stateside trip, cleaning up the apartment for our visiting cat sitter, making cards for all the occasions happening in Oregon and Washington (thank you cards! birthday cards! baby shower cards!) and just general exercising and house keeping.
On that note, a brief update on Dan’s and my fitness- we’re doing awesome! Dan is down over 30 lbs and I’m down 19. I really wanted to hit 20 before I left town, but I’m still very satisfied with my progress so far. I’m also running a distance of 7.5 miles! More than half a half marathon! It feels great and I’m just so pleased. I love that running is my hobby. I’ve definitely been enjoying distance more than speed, but I think Dan prefers to keep an eye on his times. I love that we’re doing it together and are so happy when the other succeeds in reaching a goal!
I was also planning to blog about our trip to Tokyo Disney Sea, but I’m suffering from jetlag and think it’s time to turn in!
