Dan and I are having a wonderful trip here on the big island. I’m currently overwhelmed with great pictures! I’ll blog about my trip start to finish when I get a chance, but for now here’s a pic at what we did on our road trip to the other side of the island, in the town of Hilo.

Monday at Disney Sea

Before we headed out to Hawaii, Dan and I spent a day at Disney Sea, Tokyo Disneyland’s sister park! We had a fantastic time, especially since we spent the whole day. Usually when we go to the Disney Parks here, we go after 6pm, since it’s only half price. So with a full day we rode rides we never had time to do, ate at new places and sat and watched some shows. I should also mention it rained all day! We had so much fun though, running from attraction to attraction, it didn’t slow us down one bit!

Japan Catch-up

Here I am, maintaining my usual excuse of being too busy to update my poor blog. So this entry will be a mishmash of the past couple weeks leading up to where Dan and I are now- Kona, Hawaii!

To begin, a few people asked what kinds of dinners Dan and I have been cooking. Honestly, nothing super impressive! We usually cook up chicken, fancy it up with veggies or a sauce, and have a side of vegetables.

I poured the sauce over the chicken and threw it in the oven for 45 min. It was delicious!

Another one Dan and I like is a spicy honey chicken with a veggie crust. I mixed honey with Cholula, and added in onion and garlic. Again, pour over chicken and put in the oven. It was hot and sweet!

Sometimes if I don’t want to wait for chicken to bake, I’ll throw it in a skillet with veggies. To avoid cooking with oil or butter I boil the chicken, then throw in tomato, onion, garlic, bell peppers, olives, jalapenos, etc. Sometimes a spoonful of pasta sauce.

When we buy things like Nature Valley granola bars or Cholula hot sauce, we have to find an international market since most Japanese grocery stores don’t carry them. While leaving one intl grocery the other day, we found Whole Foods reusabags!

I’ve been spending time with coworkers too! Even though we work at different schools throughout Tokyo, it’s nice to get together and talk about work and how it’s going.

Dan has been busy working working working. Putting in long hours at his office then working at home til the wee hours of the morning. Last week we were surprised with a dumping of snow and he decided to work from home so we’d have a chance to walk around and see everything buried in whiteness!

This past weekend was just a blur of getting things together for our stateside trip, cleaning up the apartment for our visiting cat sitter, making cards for all the occasions happening in Oregon and Washington (thank you cards! birthday cards! baby shower cards!) and just general exercising and house keeping.

On that note, a brief update on Dan’s and my fitness- we’re doing awesome! Dan is down over 30 lbs and I’m down 19. I really wanted to hit 20 before I left town, but I’m still very satisfied with my progress so far. I’m also running a distance of 7.5 miles! More than half a half marathon! It feels great and I’m just so pleased. I love that running is my hobby. I’ve definitely been enjoying distance more than speed, but I think Dan prefers to keep an eye on his times. I love that we’re doing it together and are so happy when the other succeeds in reaching a goal!

I was also planning to blog about our trip to Tokyo Disney Sea, but I’m suffering from jetlag and think it’s time to turn in!

Cat Cafe!

A week or so ago Dan and I rode our bikes about 6km to the town of Kichijoji. We love Kichijoji for lots of reasons- a good vegan donut place, good shopping, our favorite movie theater. On this day we found a new reason to love this town- cat cafes!

Here in Tokyo, there are cafes where you can pay a small fee to sit down to a latte in a room with 10-15 cats. We headed inside and paid $10 for both of us to go in for a half hour.

Run!

I receive more emails about running than I do about being a resident of Japan! I thought since Dan and I are 2 months into our diet and exercise regimen I’d share what we’ve been doing and how successful we’ve been.

I’d like to add that I’m not a doctor nor dietician, and a firm believer in doing what works for you! I’m not giving advice and have no advanced education in nutrition or fitness.

Running

Dan and I both have a goal- to run in the Disneyland half marathon the first weekend of September. We started training in January, so we’d have plenty of time. My first day I ran a good 9 minutes before I felt completely winded and in tons of pain from pushing myself. Pretty brutal. But the next day I ran 11 minutes. And so began adding a minute or two to my runs each time. I’m currently running 70 minutes, in which time I can complete a 10k (6.2 miles). That’s half a half marathon!

I run 4-5 times a week. I run laps in a small park by our apartment. I run whatever distance I’m currently running, or I’ll add a few minutes. I usually run during the day when Dan’s at work. Some nights when he comes home we’ll go to the gym together and do the ellipticals for 32 or 48 minutes. Dan usually only runs Saturday and Sunday, but if he works from home one day during the week we’ll run together in the morning. I also go to ballet classes which feels amazing, stretching all my sore muscles.

Clothes
I never thought the day would come where I’d be more excited to buy gym clothes than normal clothes! I definitely have favorites, but encourage people to shop around and see what works for them.

I love running in tights. I have a couple pairs, some lightweight nike capri tights and the ones in the picture, Nike dri-fit cold weather tights. If you feel like pants are bulky but don’t want to be cold I highly recommend these. I’ve also heard Underarmour makes a great pair but I’ve yet to try them.

I’m wearing a NIke dri-fit shirt which is great, but my favorite is probably from the store Lululemon Athletica (www.lululemon.com). Lululemon clothing will definitely set you back more than the common sports brands, but the quality is incomparable. Everything is cut in a comfortable, flattering style. There’s no digging, riding up, or tightness if you wear the correct size. I can’t say enough good things about the quality of Lululemon.

For shoes, I wear Nike LunarSwift 3. I like them because they are Nike+ capable, where I can send my running statistics to my iPod and upload to my computer. After trying on some other shoes, they do feel just a tad “heavy” on my feet. When I’m due for a new pair of sneakers I may opt for a more lightweight pair. But for now these are incredibly comfortable and I love them.

If you want good running clothes, I really don’t think you can go wrong with Lululemon, Nike or Underarmour. Dan also has some Adidas pieces he loves. When you’re working out, you don’t want to be uncomfortable or tugging on clothes. IN that respect, I think it’s reasonable to pay a bit more for good quality clothing.

Diet
Dan and I have been keeping an eye on our calorie intake. While we’re not being too strict, for the time being we have cut out alcohol, dairy and fast food. I don’t miss dairy as much as I thought I would! I didn’t know what to do without ice cream or cheese. But I switched to soy milk and we just don’t buy dairy products anymore. When we’re cooking most our meals at home these days, that’s really all it takes to be successful.

We cook a lot of dishes without oil or butter. We’ll bake or boil chicken. We’ll get creative with sauces for flavor (honey and hot sauce, delicious!). Our tastes are slowly changing to crave a bowl of chopped bell peppers instead of Pringles. We’ve had plenty of calorie splurges this year, like a date night out here and there or indulging in some Valentine’s Day candy. But it’s always just one night, then the next morning we’re back at it with a protein shake for breakfast and a run. Moderation and not binge-eating has really saved us. We currently have Girl Scout cookies, Pringles and brownie/ cake mixes in the house. In the past they’d be half gone the day we bought them, but we’ve really cracked down on limiting ourselves.

Honestly, weight loss feels like a secondary goal for the first time in my life. Dan and I get so pumped up when we beat a running time or go a further distance. We love cooking together at night. Of course we get excited or bummed out if our weight fluxuates in the right or wrong direction. But our changes have been in an effort to create a maintainable healthy lifestyle. And I think we’re on the right track!

February Update

I didn’t mean to neglect my blog this long! Dan and I have truly been this month!

First off, I’d like to remind everyone to go buy Girl Scout cookies! It supports a wonderful organization and they’re just plain delicious! Lucky for us, Dan’s little cousin Lexi is a Brownie and said she’d be happy to ship to us!

My most exciting news has been that I started working! I spent the past week in a training class at Berlitz headquarters learning their method of teaching, doing homework and implementing what I’ve learned in group projects with my 18 fellow class mates. It was a lot of work but everyone was really nice and awesome and we bonded throughout the week.

I’m not quite ready to teach yet though. First I need to take an exam, then a grammar test, and finally a trial lesson plan with my first student! They decided to have me start once I return from my trip home in March, so I won’t be working for a couple weeks.

Dan and I have still been dieting and exercising. And doing quite well! My “pounds lost” count is up to 14! And I can now run an hour without stopping, about 5 miles! It’s really great to see my progress. And to keep myself on track, I signed up for a 5k in Hawaii called Run for Hops, and a 5k in Portland Oregon called the Shamrock Run.

We aren’t perfect dieters, but we figure if we’re too strict it just makes temptation more appealing. So we eat healthy the majority of the time but don’t deprive ourselves on cravings. The amazing change is the dinners we crave. In January, we really wanted to say, “forget it, let’s go to McDonald’s.” Now we look forward to our healthy dishes. We also cook together which is fun. Dan will cook up the meat while I slice and dice our veggies. We’re especially fond of our garlic chicken and chicken and veggie fried rice (butter/ oil free!). I will post the recipes hopefully later this week. Candy/ ice cream desserts have been replaced by fruit, and the occasional Girl Scout cookie. 🙂

Nothing But GREAT News!

I’ll start off with my most exciting news- I am finally an employee of Tokyo! I’ve been hired by a great school to teach English 5 days a week. I’m really excited about this. I will start February 13th.

My little Penny turned 4! Two years ago on February 1st, Dan and I brought her home from a PetCo adoption site in Kirkland, Washington. I remember we brought her home, then got some Chipotle to go with our room mate Stephen, and watched 3rd Rock from the Sun dvds and watched miss Penny take in her new surroundings.

Going back a week or two ago, Dan and I live a block away from a nice little bike shop. Dan takes his bike there form time to time for a tune up or repairs or whatever it is that bikes need. I was looking at the bikes parked out front and he asked, “you like that one?” and I said, “no, it’s not pink!” The shop owner came out and asked if I liked it and to take it for a test ride. I refused because I can barely ride a bike, but he wouldn’t take no for an answer so I went down the block and back.

Dan asked if he could order the bike, complete with a basket, bell and in pink. The guy said it would take about a week.

I was getting incredibly antsy for my bike. A new way to exercise, and the ability to go places without relying on trains. It’s sort of like having a car in Tokyo!

It was supposed to be ready Monday afternoon, but we didn’t hear from the bike guy. So I went to ballet class, and then Dan met me and we had a workout on the ellipticals. As we walked home I looked in the windows of the bike shop, and there it was in all its pink glory- my bike!

I love it! Dan and I went for a quick ride that night, but it was busy out and freezing. Hoping he will give me another lesson this weekend!

I’ve also been spending a lot of time with Dan’s super awesome friend named Ryan. He hangs out with Dan and I, and lately he has been taking me to places I want to explore. Earlier this week I told him I love to knit and I”m looking for a yarn shop. He said, “I know one close, by, I’ll take you there!”

Dan and I have started going to the Ghibli Museum in Mitaka once a month. It’s an animation museum that showcases the work of Hayao Miyazaki and some other animators who work for Studio Ghibli Animation. Once a month, the museum plays a 10-20 minute animated short. They are just adorable!

Dan and I are also still running. Remember when I could only run 9-10 minutes at the start of January? Today, February 3rd, I ran 42 minutes! And I feel great doing it! That’s roughly 12 laps around our park. Dan and I calculated that it would be about 80-something laps to run a half marathon around our park, haha! We’ll get there eventually. He’s doing great too. He’s up to about 16 laps. So far my weight loss for the year is 11 lbs and still moving downward.

The job interview went really well! I was the 3rd or 4th person to arrive, and ultimately there were about 14 of us. Such a big group! It ended up not being too interviewy though. We were mostly gathered to discuss how the school runs, benefits, some rules, and do paperwork. hey wanted to see copies of our degrees and look at our passports. As we did paperwork for availability and location preferences (there are about 20 satellite schools in the area) we were called one by one for a 3-5 minute meet and greet. My interviewer was from Portland Oregon, so I took that as a good sign! They said I was really friendly and personable, and that people would like to learn from someone with those characteristics. We shook hands and they said they’d get in touch with me in the next week, good or bad.

Well, two days later they emailed me! The school in Roppongi took an interest in my file and I have a final interview with them this Thursday. Fingers cross that they like me too!

The past week has been more of the same- running training, ballet classes, cleaning up the house and making cards with my Cricut machine. For a few nights in a row Penny caused some trouble in the middle of the night. She kept getting marshmallows from the kitchen! I didn’t know if I should be grumpy or laugh! I snapped a quick picture before I scolded her and put the marshmallows back- on a very high shelf.

Toward the end of last week, we had a snow day! Unfortunately it wasn’t cold enough to stick, but Penny and I enjoyed being cozy in the apartment reading and watching the snow fall 🙂

There isn’t too much exciting news right now. January is a bit of a slow month, especially when we’re not dining out and going places, but focusing on dieting, exercising and saving money. All of which is going well! The lbs lost count climbs to 9 lbs for me, and I noticed my running times are improving as well!

I’ll leave you with an absolutely delicious recipe for healthier rice krispy treats. Dan and I made rice krispies for a New Years party and I’ve been craving them ever since, but I’m not consuming butter anymore! So I found this recipe that tastes like chocolate and peanut butter deliciousness:

1 cup peanut butter (chunky or smooth. I used Skippy smooth)
1/2 cup honey (you don’t taste it in the krispies, so no worries if you’re not a honey fan :))
1/2 teaspoon vanilla extract
3 cups Rice Krispies (you can add some chocolate chips or do what I did- substitute regular cereal for Cocoa Krispies!)

On the stove on low heat mix peanut butter and honey. Mix in vanilla extract. Stir in 1 cup of cereal at a time until well blended. Smooth into 9×9 pan. Let sit until solidified. Dan can’t keep his hands off them, they’re just delicious!
